1808 Sauvignon Blanc 2023 — organic Sauvignon grown at 550 metres inland
Herbal and precise, whole-bunch pressed and fermented cool in stainless steel. Organic and vegan.
Sauvignon Blanc this far from the sea works because of altitude: 550 metres, 119 kilometres inland, on a high plain where summer heat is answered by cold nights. The vineyard is eight years old, unilateral cordon.
Certified organic and vegan. Hand-harvested in the last week of August, early, to keep the aromatics tight. Pressed with destemming but no crushing, 24 hours of cold settling, then fermentation in temperature-controlled stainless steel. 13% alcohol.
Green-gold. Fresh and herbal on the nose, with a clear note of asparagus. The palate is intense and elegant — lemonade, floral and vegetal notes, closing long.
Serve at 12 ºC. Drink through 2029. Pairs with cream sauces, lobster with butter, roast turkey and salmon. First vintage produced: 2022.
