Cabo da Roca Guardião dos Oceanos Rosé 2025 — copper-toned, made entirely in steel
Aragonez, Castelão and Syrah pressed straight to tank with twelve hours of cold soak. Vibrant, delicate, built for the table rather than the pool.
Same vineyard as the red: 20 kilometres from the Atlantic at 96 metres, sixteen years old, 3,500 vines per hectare, north-west to south-east. Ocean air, alluvial ground and limestone slopes.
The blend is 40% Aragonez, 40% Castelão and 20% Syrah, machine-harvested in the third week of September. Crushed directly into tank, twelve hours of cold soak to draw colour without weight, then fermentation at 22 ºC to hold the fruit. One hundred per cent stainless steel — no oak at any point. 13% alcohol.
A light copper colour. Pomegranate and blueberry on the nose. The palate is vibrant and delicately built, refreshing through to the finish.
Serve at 10 ºC. Drink through 2028. Pairs with goat’s cheese, tartare, veal stew, tender meats and sushi. First vintage produced: 2016.
